Salad Safety: K-State food scientist shares tips on caring for packaged greens

MANHATTAN — Salads make a nutritious meal or an easy addition of green color into the daily diet and can be found at almost any restaurant or grocery store. But Kansas State University food scientist Karen Blakeslee said consumers also know packaged lettuce for E. coli outbreaks and a cause of foodborne illness. “Between 1998 and 2019, 36 outbreaks have occurred linked to mostly romaine lettuce,” said, Blakeslee, who is also coordinator of K-State’s Rapid Response Center for food science. According to a recent USDA study, E. Coli was more likely to be found on lettuce harvested in the fall than on lettuce harvested in the late spring. Overall bacterial contamination, E. Coli survival rate, and lettuce deterioration varied by season.

40,000 pounds of mac and cheese to donated to Kansas Food Bank

WICHITA – October 28, 2022, Land O’Lakes, Inc. donated nearly 40,000 pounds of macaroni and cheese to Kansas Food Bank through the Land O’Lakes First Run Program. “Last year, the Kansas Food Bank provided more than 13.6 million meals to Kansans struggling to put food on the table,” said Brian Walker, President and CEO of the Kansas Food Bank. “It is because of donations and partners such as Land O’Lakes that we are able to provide those missing meals for families, children and seniors who turn to us for help.” “This is an opportunity for us to assist the Kansas Food Bank that provides hunger relief to many people within our footprint,” said Brad Stedman, President and CEO of Mid Kansas Cooperative (MKC) , a member-owner of Land O’Lakes. “We are committed to addressing food insecurity in the communities we operate and proud to support our local food banks.”
