Plains Folk: ‘Scottish Highlanders’
As noted in my previous column, I saw many different breeds of cattle on my recent tour of the central Scottish Highlands, even a few dairy breeds (but no Holsteins). But the only two I could identify with certainty were Angus and Highlanders. The former breed, Angus, or crosses with many other different breeds, are well represented on ranches in Kansas and the central plains, but Highlanders are somewhat of a rarity. My granddaughter, Josie, had three or four of them, but sold them a few months back. Other than that I don’t recall seeing any Highlanders in the Flint Hills.
