Tip of the Week: After the chicken sauté
After you saute chicken breasts in a skillet, use liquid, like wine, to deglaze the caramelized juices and brown bits. Add seasonings, and you have a great pan sauce to top your chicken. Be sure to scrape the bottom of the pan to get the most flavor.
Easy recipe: Thyme and Garlic Pistachios
1 pound American pistachios, in-shell
4 sprigs thyme, chopped
1/2 ounce garlic, sliced
4 tablespoons canola oil
Sea salt to taste
Warm canola oil in roasting pan on the stovetop, add the pistachios, and toast. Add the sliced garlic and thyme sprigs, continue toasting until the garlic and thyme have coated the pistachios; season with sea salt to taste. Remove from heat, serve warm in the vessel of your choice.

Wise to the Word: ginkgo nut
[GING-koh, JING-koh] This buff-colored, delicately sweet nut comes from the center of the inedible fruit of the maidenhair tree, a native of China. Fresh ginkgo nuts are available during fall and winter and can be found in many Asian and gourmet markets. Their hard shells must be removed with a nutcracker and the nutmeats soaked in hot water to loosen their skins. Ginkgo nuts are also available dried or canned in brine.
