The last couple of falls I’ve been making hard cider. I love making cider, because once 5 gallons of cider are added to your fermentor all you have to do is pitch some yeast into it, and you’re done.

I’ve added local honey to it one year with some champagne yeast, and got a nice sparkling cider. Last year I used an English cider yeast, and got real easy drinking cider that was perfect for a fall day.

This year I want to do something different. Maybe add some brown, and white sugar to a batch to kick up the sweetness, and the alcohol content. I’m not a big fan of high ABV beverages, but I like experimenting so why not give it a try.

I know there are plenty of recipes of how to make hard cider out there, but does anyone have any great old school recipes that they’ve tried, and liked? Post it here, and I’ll give one of them a shot. Yes, Norm you’ll get a bottle to try too.
